Today I decided to share my lunch with you. Not literally – its far too tasty for that! I love bagels and this filling is particularly yummy in an onion bagel but plain ones are fine too. You may have to plan this dish because quite often the avocados that are available are like rock although you can help them along a little by placing them in a brown paper bag with a banana.
What you need:
some flavourful small tomatoes
an iceberg lettuce (not so much for flavour as texture)
salt and pepper
Firstly, split and toast whatever kind of bagel you desire. Mash – or slice – half a ripe avocado and spread it on the bottom half of the bagel. Slice the tomatoes and place them over the avocado in a circle, drizzle over some of the balsamic vinaigrette and season. Finally, take a few layers of crunchy iceberg lettuce, lay it over the top of the tomatoes and then pop on the top of the bagel. Delicious!
