Ah, look what caught my eye when I opened the fridge for lunch today – half an avocado! Since it still looked ok, no prizes for guessing what was for my lunch. I’m the only one who likes avocado in our house, just in case you’re wondering.
I got the idea for this from a magazine I was reading in the doctor’s surgery a few years ago (and it was probably quite old then) and I have no recollection of which one it was, so apologies to whoever it was for not giving them credit for this lovely sandwich combination. It’s probably even better than the bagel but at least this way you don’t have to eat the same thing two days in a row.
What you need:
leftover half of an avocado
sweet chilli sauce
soft-ish goat’s cheese
salt and pepper
2 slices bread
Spread some sweet chilli sauce on one slice of the bread and goat’s cheese on the other. Mash/slice the avocado and place on top of the cheese. Slice the tomato and place it over the avocado, season and, finally, add a generous layer of rocket. Put the slice of bread with the chilli sauce on top – it sticks to the rocket and (kind of) holds it all together – and there you go, one very good sandwich.
…….. a few kettle chips are essential too. For texture you understand. 🙂
