You may have noticed the photo* of The Meat Free Monday Cookbook at the side of my blog. This is in support of the Meat Free Monday campaign begun in 2009 by Paul, Stella and Mary McCartney. By having one vegetarian day a week we will not only be helping ourselves by having our 5-a-day (. . . and more!) but we’ll be helping our planet too.
I’m going to begin cooking from the book on Monday 5th March. This book has 52 weeks of Monday recipes – breakfasts, lunches and dinners – all arranged seasonally. My first week will be spring, week 1. I checked various sources and most people seem to think March, April and May are our spring months. The menu for the day is soft-boiled eggs with asparagus soldiers, Middle Eastern tabbouleh salad, spring vegetable tarte fine and pink rhubarb sorbet – they all sound very yummy to me (although asparagus won’t be in season in my neck of the woods so I may just have to have toast :-(). I can’t wait to get started! I’m not promising to make all the day’s recipes but I will definitely try. This is a great book and I’m hoping to encourage everyone to get a copy AND to cook from it too. (The two don’t always go together – trust me – I could cook a different recipe every day until I’m 102 and still not get through all my books!). If you’ve been following my blog, you’ll know that whilst I’m not a vegetarian, I do love my veggies! 🙂 I’m really looking forward to increasing my repertoire of meat-free dishes and it would be fantastic if I could get more people to do the same.
