For anyone who doesn’t make bread (or is perhaps a little bit scared to) the potato and Gruyère focaccia from yesterday (Meat Free Monday – summer, week 12) is a cinch. There is absolutely no kneading, just a quick beat in the bowl! Think of it as a mini workout. I couldn’t manage this with a spatula but I have a large silicone spoon which worked a treat. Of course it does need time to rise – about an hour first time and 30 mins the second – during which time you can be getting on with other things.


I think it looks quite impressive.
