Meat Free Monday – autumn, week 13

Firstly I’d like to say thank you, thank you, thank you to Laura Bailey for sharing her pizza recipe which features on this week’s menu! It is amazing – I just loved it! In fact we both did. It was actually Pizza Two Ways but I only made Pizza One Way! The base recipe was good – very nice and thin. The topping choices were pesto, butternut squash and feta or pesto, caramelised red onion and mozzarella. I was going to make both then decided against it when I tasted the caramelised onions. Caramelised with balsamic vinegar and soft brown sugar – boy, were they good. The pesto is spread v-e-r-y thinly over the base and then the caramelised onions are scattered over the top with as much mozzarella as you like placed in the spaces. A bit of seasoning and into the AGA it goes. I gave it about 10 mins on the floor of the hot oven and 2-3 mins on the top shelf. Perfect! I will definitely make the other pizza sometime ……………… very soon!


ps – I know it’s supposed to be a circle, it just didn’t quite work out that way. But it didn’t matter one little (or BIG) bit. And it only fed 2. 🙂
