When we came back from our summer holiday (ages ago) my neighbour had very kindly looked after the greenhouse and a lovely tray of tomatoes was waiting for us! Some of the tomatoes weren’t great in either flavour or texture so I dried them in the oven. Cut the tomatoes in half or quarters, depending on their size and place them in a bowl. Add enough olive oil to coat them lightly, some crushed garlic and season. Lay them on a large oven tray on some baking parchment so they don’t stick and put them in the bottom oven of the Aga for as long as they need to dry out. Some of mine took six hours! I put some in a sterilised jar covered with oil and the rest I froze. They’re really good.
We were also left with quite a few green tomatoes which I used to make chutney. I used a recipe of Nigel Slater’s which used a mix of red and green tomatoes and one from Riverford Organic which used just green tomatoes. Unfortunately I need to wait six weeks before I know if either of them are any good! Fingers crossed!
